Does anyone have a really good(healthy) recipe for blueberry muffins? I almost bought low fat muffins today but decided I should make my own so I control what is going into them. Jill

Preheat oven to 400 degrees. Grease a standard 12-muffin pan or line with paper cups.
Whisk together in a large bowl: 2 c flour 1/2 to 1/3 c sugar 4 t baking powder 1/2 t salt 1/4 t baking soda, if using yogurt instead of milk 1/4 t nutmeg
Whisk together in another bowl 1 egg 3 T vegetable oil or 3-1/2 T melted unsalted butter 1 t vanilla 1 c nonfat milk or nonfat yogurt
Add to the flour mixture and mix together with a few light strokes, just until the dry ingredients are moistened. Do not overmix; the batter will be light but stiff and not smooth. Fold 1-1/2 c fresh or frozen blueberries into the batter.
Bake until a toothpick comes out clean, about 15 minutes. Let cool 2-3 minutes before removing from pan. Serve as soon as possible.
I've made the reduced fat muffin recipe in the Joy of Cooking and added frozen blueberries, with really good results. I'm at work now, so I can't post it till I get home. It calls for 3-1/2 T of melted butter or oil for 12 muffins, but I've never used more than 3 and nobody complains.
