I also made a really good salsa for this afternoon. Ton's of flavor!!!!!
Salsa from Skedwards's Pantry
1 15 oz. can diced tomatoes (Do NOT drain) 1/2 medium onion 1/2 cup fresh cilantro (adjust to your own tastes) 2 small (or 1 large) clove of garlic 1/4 cup sliced jalapeños 1/3 cup Roasted Red Peppers (because I had them on hand LOL!!) Juice of 1 Lime
Put all ingredients in a food processor. Pulse until mixed and you reach a chunky consistency. Enjoy!!

LOL!!! Yes and I had fun!!! DH and DS are NASCAR fans. We actually didn't have a meal but had snacky foods to eat while watching the races (actually I was in the kitchen most of the time but that was fine with me!! LOL!!!)
These may not have been the most nutricious and low calorie foods but it also could have been a lot worse.
