Who knew by me being at home these days what eating in can really do?
Well, not only have I really been sticking to this AM workout, but my cooking went from average to above average. I seriously having a lunch that I think I would order on a menu, BUT I made it and it half the size. It really tastes gourmet.
I am having sauteed spinanch with walnuts and I sprinkled some goat cheese (feta would be good too because I know not everyone loves goat cheese) and a splash of Bal. vinegar. Also, I had some leftover blk. beans from last night's dinner. Heated those up and chopped some scallion.

Never had goat cheese, but that does sound like something you'd pay big bucks for.
I don't think it is too expensive as cheese goes. Goat cheese is often produced by small, local cheese companies so that can make it a little more reasonable. I have to confess to not really knowing how much I pay but I don't have it in my head that it is a 'splurge'. It is a very flavorful cheese so a little goes a long ways and that's why I use it as part of my healthy eating stuff.
