Take your favorite banana nut muffin recipe and substitute pumpkin and maybe add some chocolate chips. You can make muffins out of it or put the whole batch of batter in a cake pan and bake it as a coffee cake. It was quite a hit at a recent brunch. Laura

I'm thinking pumpkin ravioli sounds wonderful. You could be a witch because your ravioli will be "wickedly delicious". Wish I had a recipe for you, but I don't. I believe however the ravioli would be a great hit.

There is that WW recipe that's been running around for years that is a can of pumpkin and a cake mix and you can make muffins out of it or a cake. I have never tried it but have been meaning to. I think I've got that right but I'm sure it would be easy to confirm that. I personally would LOVE to have a slimmed-down version of pumpkin bread. I love it but my recipe is a figure buster. Extra credit if you can get chocolate chips in it!  Peg

Don't have any pumpkin recipes but you could get a crown (maybe from Burger King  ) and wear a cape. You are the Queen of Cooking Thin!
