Last Friday night I made KD's School Night Chicken Burritos. As I was prepping everything to make them, I realized I was out of brown rice (actually, all rice). I REALLY wanted these burritos, so I decided to substitute bulghur. I cooked one cup of bulghur just the way the instructions say to cook the rice. It was great!
Now, the other thing that I found is that this recipe makes a lot more than 10 burritos. I cooked 10 burritos that night (using the 8 inch tortillas, and they were pretty full), had 3 more that I put into the freezer (13 total), and still had 2 cups of the filling mixture left. I froze the filling mixture for another meal. The other thing that I found was that with 1 teaspoon each of chili powder and cumin, it wasn't seasoned enough. I kept adding and tasting, and ended up using 1 Tablespoon of each seasoning.
I know I have made these before, but they had gotten out of the rotation....they are now back in!

My dd loves these. I've found that the filling will make two pans of burritos. So I just freeze one for a whole different dinner later. I have also frozen them individually to use for lunches.
Lori, This has become one of my favorites too. I agree, it makes a lot more than 10 burritos. I always have a lot of filling mixture left that I freeze. I also agree, I add more seasoning too. Since it is just me and dd I have a lot of frozen burritos which is great for nights I don't want to cook-just pop one in the oven and bake for a bit, done!
