I made those cakes way back at the very beginning of my journey and they were yummy. I don't know any reason why they wouldn't freeze off the top of my head. What if you did preserved lemon? Not exactly sure what you do with dehydrated lemons later though. I wish I could come take some of the plum and the lemons off your hands. I'm not sure about recipes but maybe you could set up a mini-farmers market in your front yard  I wish I lived closer, I'd take many of those lemons off your hands-we could swap for mint. My backyard has been taken over by mint!!! For the lemons-I like to cut thick slices of them and toss them in a pitcher of water. You can even add some sugar or sweetener to make your own lemonade. When strawberries were in season here I added those for strawberry/lemon water(did not need more than about 2 or 3 tsps sugar for the whole pitcher because of the sweet berries). What about some sort of lemon sorbet or along the lines of cocktails you could make some kind of lemon/sugar/mint (or even basil or some other herbs) and ice mixture to freeze. Once frozen you can scoop some out and add vodka, rum, etc. (I think with lemon, vodka might taste best). Jill

How far are you from the Fremont BART station? I could be there in about an hour...and DS and DH won't be home till late...I'm not sure I could make enough of a dent in your fruit supply to be helpful, but we could have a baking fest.
