A couple of friends are coming over for dinner tomorrow. I need some ideas for dinner. It doesn't have to be anything fancy, they're coming over to play cards.

Originally, I was thinking of making manicotti, but my house is a real MESS, and DH will not be around to help clean. That means, I need something that doesn't involved a lot of prep time. I was thinking of something like a pot roast, that can be stuck in the oven and forgotten about while I'm scrambling to clean. That just seems to hum drum though.

Neither of them are picky eaters and both will eat mild to medium spicy food.

I was thinking about the post roast last night- I could almost taste it.

I'm so glad I made the pot roast. My friends are both single, and they kept saying things like "I haven't had a meal like this in so long." "This is just like eating at home." (Home meaning family's home.) "This is such a Northern meal, I haven't had this since I moved down here."

Is pot roast a "Northern" thing? I thought it was pretty standard across the US.

Thanks for the ideas everyone! I asked DH and he was leaning more towared the pot roast. So, we're going with pot roast.

If anyone is ever in Atlanta, let me know and you can come over for pot roast or chili and cards.

Go with the pot roast. You can prep the onions, carrots, celery tonight and put it all in the roasting pan ready to throw in the oven tomorrow. You could also chop up the potatoes and keep in a pan of water ready to go on the stove. How about turning those potatoes into KD's mustard smashed potatoes? Little twist on your dinner to make it a little more special. Have fun playing cards with your friends.

I think a roast sounds great! You could also do a pork roast or chicken, with rosemary and garlic. MMmmmm the smell when they're roasting is wonderful! Roast some potatoes, celery or fennel, carrots in the same pan, simple!

I immediately though about chili too. You could do a salad with it and cornbread (store bought) and be done.

If I want to go the extra mile, I'll put out a "fixings bar" with chopped tomoto, green onion, salsa, ff sour cream, shredded cheese, diced avocado and hot sauce and let people put extra toppings on their chili to customize it.

Smiler Evenings like that, Dawn, I usually throw some chili together in a crock pot. You can go to the grocery and buy a few bags of their Pizza (bread) dough. With it, you can cut some small pieces and spray the underside of a muffin pan and place the little doughs around it, making little cups. Bake them for like 10 minutes. Little bread bowls for the chili.
You can also roll out the dough. Brown some sausage you have removed from the casing and layer it on the rolled out dough with some shredded Italian blend cheese. Roll it up, coat with a bit of evoo and bake for about half an hour. Slice it up and you have little sausage sanwiches. If you want you could get fancy and brown some onions and peppers to serve either alongside or inside the bread.
You can make a nice quiche with some spinach, sausage or salami, cheese and eggs and a frozen pie shell.
Then call me too and let me know what time to be there!!

Pot roast sounds good to me too. And I like to play cards.
I think that most people don't make homestyle. comforting meals for themselves too often. Roast with a veg and maybe mashed or raosted potatos sounds great.

We often serve homemade pizza- sort of make your own thing when people come. You can even buy white or ww bread dough in the freezer section, pre grated cheese and cut up toppings.
I generally make a sundae bar for dessert when I make pizza.

Pot roast would be a nice dinner to me... especially since I never have it at home.
