Last night I made KD's one pan chili chicken and rice. With apologies to KD (I can't seem to just make a recipe exactly as written), I made a few changes.
I added green beans in place of the peas (starchy mushy texture issues here) and potatoes. I elimiated the tomatoes and increased the stock. I added chili powder and cayenne powder to the seasonings. I used brown rice instead of white.
The cooking time took well over an hour, but that happens with brown rice. Before dinner was served, the chili chicken turned into mock paella. It was fabulous, and hubby has been banned from leftovers. I intend to make them lunch today and dinner tomorrow.
It was really filling, and the calories (for those of us who count them) were low enough that I even got to eat a small piece of carrot cake. Yeah!
I was thinking that this dish would also be good if you eliminated the liquid, rice, tomatoes, and just made it into a skillet supper with the chicken, potatoes, and veggies (like a chicken hash type of dish).
Life is like a roller coaster, with lots of ups and downs, but the curves, spirals, loops and corkscrews are what make life interesting.
I made Chipotle lime chicken tonight. Kinda made it up as I went. Chicken sauteed in lime juice, with onions, garlic,a little chipotle chile sauce,a quarter cup of water, a little bit of sugar and after it sauteed down, I added a little bit of sour cream. Served it with zatarains carribean rice mix, and threw in some corn, peas, and broccoli the last five minutes and served it up. It was really, really good. Nisha

Curried chicken - boneless, skinless chicken breasts cut into small cubes. Marinade them in red curry paste, lime juice, 1 t of sesame oil, and fresh basil. Add chicken stock to a sauce pan. Add the chicken and the marinade to the stock and cook at a roiling boil for 15 minutes. Serve over rice. Quick, easy and delicious!

I like drunk chicken. You pour about a half a bottle of dry white wine over chicken, onions, mushrooms, peppers, etc. Add seasonings you like9 CAVENDER'S greek seasoning or Tony Chachere's cajun are two we like) and either bake it or do it in the crock pot. I drain the liquid off, try to skim the fat, and make a sauce and serve it with garlic mashed potaotes and a salad or green beans. Nisha
My boyfriend's "signature" dish is what he calls Chicken Salsa. . .and it's actually pretty tasty.
Cube 1 to 1 1/2 lbs of boneless, skinless chicken breasts or tenderloins. Put these and a jar of salsa (I like the kinds with corn & black beans) in a casserole dish, cook 30-40 minutes at 375. Serve over rice, and I put a dollop of fat-free sour cream and some grated fat-free cheese on top.
