I'm trying the recipe for "Moist Fudgy Brownies" tonight. Unlike the banana bread recipe, which actually calls for half whole wheat and half white flour, this one called for all white flour, but I still did pretty close to a 50/50 mix of ww and white. As I'm out shopping, I have been investing in cute little pans for my small batch baking. I found little throwaway foil pans called pot pie pans and I'm trying those for the brownies. I also found some heart-shaped throwaway foil pans that I may use for Valentine's Day. After decades of not baking regularly, it's kind of cool to be back at it again. Esp. cool to know that I can bake and have a little something sweet without worrying that I'll keep going back and back (because the whole point of this book is that it makes small batches for 1 or 2). I'm also finding that the recipes seems to be pretty quick to make, which is good for the Lazy Chef.
Goals: 1. Exercise-Cardio: 2-3 walking or DVD cardio workouts per week. 2. Exercise-Weights/Toning: 1-2 weight plus 1 toning workout per week. 3. Food: Increase veggie servings back to where they were. 4. Behavior: Reduce sweets.

Oh yeah, the banana bread rocks! I also like the sweet potato tea bread on the very next page (which I've made with pumpkin and butternut squash, too). The chocolate chip cookies and the oatmeal cookies are both good, but I didn't have very good luck with the gingerbread.
