Well, in less than 48 hours, I will have my full house of two sons, a husband, two dogs, and me back together again. GOD save us! I don't know how I raised them in this little cracker box...but that's not why I am writing.
I want to revolutionize their eating habits this summer. None of them are slim jims..although they are very active riding bikes and walking...they need to get the food thing under control. They will eat almost everything, and love salads and vegies...but also steak and chicken grilled. Have you seen any really good (besides KD"s books) recipe books out there with normal ingredients and great ideas for summer cooking. WE are not big on sweets, except ice cream in the summer. Also, any ideas on how to make this revolution stick or start? Knew I could count on you.

Stick with things they like such as steak and chicken on the grill, but make one steak and slice it thinly and serve on top of salads. That way they still get steak, but much less of it.
Grilled boneless skinless chicken breast are lean, and you can marinate them in all kinds of marinades to change the taste. Grill veggies too as a side dish.
Also, steak or chicken kebobs would be good.

What a super idea, Laurie. We gave him AB's book and RR's book in the fall last year; and then got a phone call on how to make "mom's" spagetti sauce. It was an interesting year, but I am going to keep track of those recipes, and then we will both have them! Thanks

I hope you all bought stock in Kleenex, because next to kindergarten, this was the hardest year of ups and downs I have every had.....Now for the funny part, I corresponded with a gal who is the studnet liason on campus, she said I did such a good job of making it through the first year, she wants me to take part in orientation for new parents and mentor them along....what a hoot!

Sounds like a fun packed summer! Lean meats on the grill are good. You could only buy enough for each person one serving- portion control! I love the binder idea too! Maybe you could buy icecream in smaller containers and less frequently. You are the shopper (I assume) so you have loads of control!
Glad to hear that you have your family back under one roof for the summer : ) You did it Cathy - you survived the first year at college - CONGRATS!
I love Laurie's idea of setting up a recipe binder. I think the best you can do is to continue to be a great role model for your family and keep reinforcing the health benefits of eating well and exercising.

I just wanted to say congrats on having everyone home for the summer. I know that you missed the kid who was away at college.
I used to "force" my family to watch "Cooking Thin" when it was on Sundays. (The basketball playoffs only last about 16 weeks or something. They can miss 20 mins of BB so I can watch my one show a week. They stayed and watched CT because I would switch back to BB during the commercials.) My 12 yr old and I were watching "Low Carb..." and he was horrified at the amount of heavy cream, cheese, meat, etc. I also see him making choices at portion control. Maybe some of the healthy conversation is sinking in.

I have an idea to help the healthy eating stick with them when school starts back up.
As you go through the summer, and you find recipies they enjoy, start a 3 ring binder for each of them to take back with them. Hopefully they have some sort of kitchen access.
