Day 2: I planned ahead a bit, and got the rice and the asparagus ready to go before I left for class. All S had to do was start the rice and preheat the oven.

I don't think I would make this recipe again. It was edible, but not really tasty. The salsa was a bit too bitter. I'm glad that I only made half of the recipe.

Tonight I have the rice leftover from last night, and I have collected leftover veggies from the last three meals. This is going to be some fancy fried rice with broccoli, mushrooms and asparagus.

I used to plan meals very well, then got out of the habit. Last weekend we sat down and planned and we made everything on our menu. I was very happy because nothing we bought went to waste, we ate great tasting meals, and we had leftovers for lunches. This weekend flew by and we have not planned yet for the week. We are having snow right now so if I am off tomorrow I will get that menu planned.

Our dinner menu from last week was:

Meal one: Cornish hens, roasted asparagus and tomatoes, and dittalini (sp?) pasta.

Meal two: Barbecued chicken breasts(boneless/skinless), salad, and dd and SO had some chicken flavored noodles that I passed on.

Meal three: Pulled pork bbq, home-made coleslaw, mac-n-cheese(I passed on the mac-n-cheese too).

Meal four: Pasta with meat sauce and salad.

Meal five: Ham and string beans made in the crock pot.

I have no specific goal(s) right now. I am trying to find the spiritual side of myself that I lost somewhere along the way.

progress report:

Dinner number one accomplished. It was tasty, but for the trouble, I think I prefer mini meatloaves. But the mushroom gravy was tasty. It's always nice when a wing it sort of thing turns out well. The potatoes were done way before everything else, but they were tasty cold.

Plan ahead: Extra broccoli and mushrooms pre-cooked for fried rice later in the week.
