I have an obscure edamame question. I just had a serving that I had nuked and salted. Tasted ok. I liked it a lot better though when I popped the bean out of the little skin, sort of like a lupini bean. The label indicated 9 grams of fiber in a 1/2 c serving which is awesome but now I'm wondering if 1/2 or more of those fiber grams are residing in my trash can. Anyone know if those peels are a big part of the fiber?
Anyone have any good recipes for roasting edamame? I looked at a few. Might try that with the rest of the bag. I bought the bag to make KD's salmon recipe in the blue book which is AWESOME by the way.
i have been getting into edaname also. i dip them in dijon mustard--so good!
trader joe's sells them in the freezer WITH the pods, and also in the produce section already de-podded. it cost less WITH pods, but i like buying them already peeled and rady for eating.

LOL Denise. Yep, they are edamame. Now that I think about it, I ate the skin too when I put it in the fish dish but yesterday one slipped out of the skin when I picked it up and it was a little tastier that way. Maybe I over-nuked them. I bet that is a big part of the fiber content...sort of like most of the nutrition in a potato is in the skin. Guess what else I'm not crazy about?
Bummer on not finding them in the freezer w/o the pods. I got mine at Safeway and it was their brand. Maybe you could put in a special request to get them back.
First and only time I had edamame, it came in the pod and I ate the pod and thought "How disgusting!" So it's good to hear that it's not really meant to be eaten. LOL Didn't make me sick though, that I can remember.

Here are the directions for favas, "If you want to use fava beans in any of the recipes below, you'll have to shell and skin them first. The easiest way to skin them is to blanch them in boiling water for a few minutes, then slit the skin with a knife or your thumb nail, and squeeze gently to slip the bean out."
That seems like what your are describing.
But I guess if you have the NI... you must have the wrapper and the package saying that they are edamame.
I used to be able to find Edamame already shelled and frozen... but now I can only find them really kind of expensive shelled and cooked and "ready to eat" in the produce dept... or frozen and in the pod.
But have never noticed a skin around the edamame beans... only fava beans.

No, it's not the pod, it's a thin skin that's on each bean that I popped off. The bag I bought was out of the pod already but they still had these little skins that came right off if you gave them a little squeeze.
I looked around today too and couldn't find anyone that mentioned the little skin...just the furry pods.
Don't eat the pod! Bleh. I don't think the pod counts as part of the fiber. I have never had the pods served as part of a dish. In the Japanese restaurants, the bowl comes with the beans in their pods, steamed and sprinkled with a bit of sea salt. You are supposed to suck the beans out of the pod and discard the pod. The only question is lengthwise or horizontal removal tastier. They are pretty tasty either way. But I think eating the pod will just give you a big belly ache.
This site says to push beans out of the pod and eat, discard outer shell. It show the fiber at 4g for 1/2 cup serving. Hope this helps. This site says there are 9 grams of fiber in a 1/2 cup serving of shelled edamame.
