What's your favorite five minute meal right now?

Mine is seaweed salad (i buy) tossed over baby garden greens and spinach with orange sections (i peel em) microwave poached chicken (shredded or cubed) and microwave steamed asparagus and broccoli (diced). Delicious!

kashi 7 grain pilaf (It takes a long time to cook the first time, but it makes a lot so I have leftover in the frige.)

Mixed with pinto or white beans and TJ's "Green with Envy" frozen veggies which has frozen broccoli, asparagus, edamame, spinach and some other stuff I think...

Warm it up, and sprinkle with shredded parmesan cheese.

Breakfast food for dinner. Eggs, omlettes, eggs and pancakes...

Sandwiches. Quick and easy and healthy with whole grain bread, lean meat and not loaded with cheese or mayo.

I do this too, but not with onion, and I put it over salad greens. (I like raw onions, they make me feel icky though...)

My favorite meal right now...

I've got a container of shredded napa cabbage, shredded carrots, bean sprouts and red peppers (leftovers from Tues dinner). They are all raw.

In a bowl, mix some of the cabbage mix (1-2 cups), some brown rice, half a diced avocado, some immitation crab meat. mix it all together.

dressing 1 tsp soy sauce, 1 TBS of vinegar, some wasabi, a couple drops of sesame oil. Dump this over the bowl.

It is sort of like Sushi California Roll meets Chinese chicken salad.

Salad greens, diced avocado, red onion, diced pickled pumpkin. Spray with evoo and white wine vinegar. Serve with piece of chicken, either grilled or broiled. Or fish, probably.

Wrap with whatever meat I have leftover in the fridge and a salad on it...spritz it with a little dressing, wrap it up, cut in half and you have a beautiful, healthy, 5 minute meal

If I don't have any meats leftover, I'll add some frozen corn, some black beans, and salsa....tex mex wrap. YUMMMY!!!!

blending one cup of soymilk with frozen fruit. but not blending it too much to keep the thick texture.

Edamame and chicken with pasta

Toss boiled edamame, cooked chicken breast strips, chopped red bell pepper, chopped cucumber, chives and cilantro. Mix 1/2 tsp sesame oil, 1 tsp olive oil, 1 tsp soy sauce, 1 tbsp rice wine vinegar, 1 tbsp water and 1 tsp chopped ginger. Mix it all with cooked spaghetti.

Ramen noodles (throw out the seasoning pkg) boiled 3 min with a handful of bay scallops and then mixed with leftover chopped steamed veggies.
Sometimes I throw in 1/2 serving of microwaved brown rice from Success. (1 full serving of rice is too much for this dish).

Linguine with shrimp. Simple as saute garlic in olive oil, throw in a bag of frozen deveined, shelled srimp, salt, pepper, parsley. Boil a pound of linguine, drain and toss with shrimp. Yummy!

Spinach salad with garbanzo beans, cherry tomatoes, red onion, cukes, bell pepper with roasted beet dressing. This works with left over salmon and chicken too in place of the beans.
