| Sometimes when I cut up carrots and celery, I put them in a ziplock with a few ice cubes. That seems to give them a bit of moisture and helps them retain their crunch.
I would probably wait until the last minute to cut up the cukes. Another option might be to make a quick pickle with them. Add some lightly flavored vinegar, like rice wine or cider vinegar, a bit of sugar and some dried dill. Add sliced cukes. It lasts for several days in the fridge, and depending on your dressing, could go quite nicely in a salad. | | | |

| Have you tried Tupperware or other lidded plastic containers? Or maybe you need to keep them in separate bags/containers. Also, when I cut up apples or pears for DS's lunch, putting them in some cold water in a tightly sealed container keeps them from turning brown -- at least until lunch time. | | | |
