I have some leftover mashed potatoes and some mixed veggies from a few nights ago, some frozen ground turkey in the freezer, some onions, garlic, spices, sharp cheddar, etc. Anyone have a yummy recipe for putting all this together?

This is probably not "true" Shepherd's pie but I like it ...

I add a can of condensed tomato soup, 1 tsp. thyme and one tsp. of Worcestershire to veggies and "meat" (I usually use a meat substitute like the soy crumbles - but you could use ground turkey instead) and mix well. Then top with mashed potatoes and bake at 350 for about 1/2 an hour or till heated through.

Very easy and I always have leftovers for lunch the next day.

You may have already done this but you can just put the meat veggies and some pre-made gravy as the filling. If you have potatoes then sometimes you just need broth and any combined seasonings (aka: 'chicken' seasoning') to make it good.

Stephanie... Shepherd's pie doesn't use pie crust. Smiler

Next time, eliminating the pie crust would be an easy way to shave off some calories.

My grandmother put beef kidneys in her's. Nothing like the texture and smell of kidneys. Good way to lose weight... because the smell of them cooking makes a person lose their appetite. Smiler

Thanks for the suggestion. The only changes I made was a can of roasted garlic tomatoes instead of sauce and a tbs. of sugar. I poured it into a pie crust and topped with the potatoes and cheddar. Thanks for the help.

I would brown up the turkey with some of your garlic, onions, a little chili powder and a bit of oregano, add a cup and a half of tomato sauce and a little salt and pepper. Spray a casserole dish with some nonstick spray, layer the beef, the veggies and the mashed potatoes. Bake at 350 for 25 minutes, Add the cheese and bake for another 5 minutes. Let it sit for a few minutes after coming out of the oven.
