Hey everyone. So I have finally gotten a dinner co-op organized. Our main mission right now is to do freezer meals.

Any ideas? Here are some of mine:

Meatloaf
Meatballs
Baked Ziti

I use them for (a Rick Bayless recipe) open faced enchilladas.

stuffed shells
enchiladas
any "burger" patty
2/3 of the way cooked then cooled chicken, beef (so that it doesn't dry out when microwaving)

cooked taco meat
stromboli
hash (beef, sausage, etc.)
stews
soups
pot roast & noodles
spaghetti sauces (pasta kept separate)
pesto

partially baked pizzas (the crust anyway, cool then top & freeze)

rouladen
any cooked & portioned whole grain

You can also make your own frozen "bagged meals" by freezing the sauce of any meal in ice cube trays, freeze veggies, pasta, meat on cookie sheets in a single layer then bag once they're all frozen. They can be warmed up in a skillet or microwave in 10 minutes or less. I do a pesto & meatball with pasta one that gets raves from company. I stole the idea from top chef (season 3). Wink

Like Denise, I always have single servings of cooked whole grains, pasta, rice, etc. in my freezer. You can defrost them and make really nice side dish salads with them, too. But I never combine unfrozen pasta, rice, or any other grain that soaks up liquid with a sauce that is not already frozen. They get all mushy in the container from soaking up extra sauce. Eeker I've never understood how baked pasta is the exception to this rule, since lasagna never gets mushy, but any other pasta will. Go figure.


Life is like a roller coaster, with lots of ups and downs, but the curves, spirals, loops and corkscrews are what make life interesting.

And I ALWAYS have individual servings of brown rice frozen. One defrosts in 70 seconds.

I've frozen just plain cooked pasta.

If I know that a heat wave is coming on Saturday... I'll cook up a bunch of pasta on Thursday, while it is still cooler, and freeze it.

Then I don't have to turn on the stove on the very hottest days.

I find that any grain (pasta or rice) freezes well. I morph pasta into simple casseroles with veggies.

Breads and rolls freeze well too.

I got a bunch of meals from one of those 'freezer meals to go' places last spring and my favorite by far was the fajita makings. You still have to cook them up but they cook really fast if you have the stuff all chopped and marinated. You can also do a lot to control nutrition on them. I personally prefer fresh veggies but the frozen ones worked fine.

Chicken Tiki Masala freezes well (I speak from experience on that one).

Hearty soups for when it gets cold again.

Salmon burgers freeze well
