I like to eat sandwiches, especially turkey and chicken, ham from time to time, but the sodium content has me floored. I've been avoiding it for that reason.

Does anyone have any good alternatives? I know Boar's Head makes a low-sodium ham, so when I have bought deli ham, that is what I get, but even that still seems kinda high.

Thanks for the ideas. It always seems like someone around here can answer your questions. That's what I love about this place.

I may try this once I have more room in my freezer. I stocked up on frozen veggies and stuff on my last trip to Trader Joe's in Indiana, so my freezer is still packed.

Now that its yard sale season, you can always pick up a slicer on the cheap. You can also buy a larger packet from the deli than you need and freeze some.

Dawn,

I freeze mine in individual portions, and I do put a teaspoon or two of the broth in with it. I take the meat out the evening before and thaw it in the fridge.

It freezes quite well. I sometimes freeze chicken or turkey with a little broth. You can put it in individual portions.
I know what you mean about it drying out. Perhaps the freezing and broth will help.

How well would those freeze? When I do buy deli meat, we're lucky to use a 1/2 lb. before it goes bad.

I know cooked ham freezes okay, but what about cooked turkey and chicken, does it dry out?

This is what I was going to suggest. That is what we do. I make a roast or grilled steak, and slice it really thin for sandwiches, same with turkey breast, and chicken. For ham, when I buy it, I buy a small turkey ham, and have the butcher slice it paper thin. I also slice pork tenderloin really thin for sandwiches also. We LOVE sandwiches in our house, and this is an economical way that I have found to still enjoy some of our favorites....not to mention MUCH healthier...I don't do well with nitrites or nitrates, and most deli meat has those as well as other additives, not to mention the extremely high sodium levels.

If you have a local meat market, they might be willing to slice cooked meat that you bring in or slice some of their prepared meats--if they sell roasted turkeys or chickens, for example. Some markets may also prepare their own deli meats on-site, giving them better control over the sodium & additive content.

I don't know if all chicken and turkey lunchmeat is smoked, but I know the smoked stuff has higher sodium. I was using the stuff in the little plastic container for a while. Ugh, I'm blanking on the brand. I THINK it may be called Deli Select, but that's the name of the product, not the brand name. It comes in honey ham, smoked ham, roast turkey, smoked turkey and roast beef, I think. My favorite is the honey ham as far as taste goes.

It's the one with the commercial where the wife calls her dh, who works at the deli counter of a grocery store, and says "Honey, please bring home more of that thin sliced deli meat that's so good." and he goes to the lunchmeat section and gets these containers (his wife thinks it's from the deli counter). They actually come in little Glad containers with red lids.

I don't know if it's lower sodium than what you're already using, but I was using it for a while and I am usually pretty cognizant of sodium levels since I had borderline hypertension. OTOH, I usually got the ham more than the turkey. I seem to recall the sodium was worse on the smoked turkey.

I know that this isn't the most practical, but I try to cut my own turkey and chicken into really thin slices for sandwiches. My dh has high blood pressure so cold cuts are a no no for him.
