Found this recipe on WW website this morning. It sounds perfect for these hot august days! Would be wonderful with a grilled fish filet, or a small grilled steak!

This month's Eating Well Magazine has a fabulous recipe for Watermelon Gazpacho in it. I know it sounds weird, but it was really good. I am not a big fan of tomatos, so it was fun to find a gazpacho that didn't use them. I would venture to guess that if you didn't know there was watermelon in the recipe, you wouldn't be able to tell. It had a great texture and was very refreshing. I will try to post the recipe on Sunday.

Lori, you are right on, it's great on fish, which reminds me I have to take some out tonight. Eggs, and anything else you'd put salsa on....absoultely yummy, and so few points because of all the vegetables in it.


Summer Challenge Goals:

1. Get out of the house and in the pool four days a week.
2. Schedule meals a week at a time.
3. five fruits and vegetables a day, along with water.
