a blueberry-peach crumble pie (or possibly cobbler)
Why?
We're taking dinner to friends who just had a new baby. Chicken is the protein of choice and there will be a grill to cook said chicken.
I was debating a blueberry viniagrette cole slaw, but still need a starch component and an idea for what to do to flavor the afore mentioned chicken.
And is blueberry-peach crumble/cobbler and blueberry viniagrette cole slaw too much blueberry at one time?
I'm asking because I'm overtired and my creative thrusters are not functioning on all cylinders, so I can't tell what is overkill and what ties the meal together nicely. And what non-blueberry flavors will meld nicely.
Life is like a roller coaster, with lots of ups and downs, but the curves, spirals, loops and corkscrews are what make life interesting.
Corn on the cob? It's so good these days. Tomatoes sliced with a great vinigrette? So good now too.
As you can tell, I am thinking farmer's market offerings...
Adding... If they just had a baby, I can assure you that they will not be nitpicking flavors or pairings. They'll just be so glad to have a meal prepared- almost any meal. It's a totally overwhelming time. Just a thought...I bet they'd appreciate leftover for another lunch or dinner.
Hmmm. Well, first, your dinner sounds amazing. And I don't think it's too much blueberry. For the starch, what about a blend of oven roasted sweet and regular potatoes -- very lightly brushed with olive oil and sprinkled with some fresh herbs -- maybe with a little drizzle of lime at the end. I'm a big fan of bbq -- maybe you could find a recipe for one that's low in sugar. I think that any kind of citrus-based marinade pairs nicely with chicken, too. I really love fresh pineapple grilled alongside it. Okay, now I'm hungry! Good luck with your dinner -- let us know what you decide on.
