"The vegetables you like the least will grow the best."

For two people who have never managed to keep a house plant alive, DH and I have a thriving vegetable and herb garden for the second year in a row. But I now have enough crookneck squash to throw in a parade! I've sauteed it, braised it, baked it in a polenta casserole, even given it away -- and I'm out of ideas. DS won't touch it. And still it grows...

Any recipe suggestions? Thank you!

Susan, our local food pantry takes donations of fresh produce from overflowing gardens. Not sure if that's an option where you are?

Thanks for all the delicious ideas! Can't wait to try them.

BTW, there is a corollary to Murphy's Law of Gardening: The vegetables you do like will reach their peak while you are out of town. Judging by the shades of green, yellow, and orange on our tomato plants, there will be a bumper crop while we're on vacation. The neighbors have been alerted to help themselves. you can grill them..slice them length wise and coat with olive oil..salt and pepper them really good and grill them...they will be super sweet this way

slice it really really thin and pan fry it with lots of potatos and onions.

I never liked to eat them either until we started cooking them like this. Start with just a few squash and lots of taters and gradually use more squash in weeks to come.

Adding to Denise's comment...chopped up and added to a tomato sauce on pasta, it's near-impossible to taste.

Sliced and grilled, it's also not too bad. But we'll grill it, and then add it to a pasta salad.

I like it sauteed in a bit of olive oil with a shallot, some garlic and thyme. I then top it with some fresh parmesan.

You could do the faux fried zucchini thing. I cut them into pieces resembling fries or I do rounds. Dip them in a bit of seasoned flour. Then dip them into evaporated milk. Then dip them into seasoned breadcrumbs. You can then either pan fry them. Or you can give them a spritz of spray grease and pop them on a cooling rack on top of a baking sheet and bake them in the oven. I like them with a little ranch dip on the side. Maybe DS would like them that way...
