Wii Fit, WW, and a question :)

Good morning everyone,

I know, it's been a long time since you all have heard from me.....this past couple of years has been exceptionally busy with homeschooling and such, and it is difficult for me to get to everywhere online that I like to in the amount of time that I have on the computer each day.

So here's a quick update on me Smiler
For my and my hubby's 19th anniversary in late January, we bought a Wii Fit and have both been using it daily since we got it the first weekend in February. I've lost 5 pounds in the past month, and using the Wii Fit on a daily basis has encouraged me to be more active in general....hubby too! He has kind of "turned a corner" and while he's always wanted to eat healthfully, he's starting to really pay attention to what he's eating it, when he's eating it, and the amount of exercise he does each day.....which is motivating me more than ever before! And I rejoined WW Online and have actually tracked my points EVERY DAY for 2 weeks now...everything that I've put into my mouth....amazing for me Smiler I usually will track for 2-3 days and then get sporadic. I've tracked now for 2 solid weeks Smiler

Ok, onto my question..... I have been asked to "cater" (a bit of a fancy word for what I have convinced myself I am doing Smiler) a little "reception" following a funeral tomorrow for our Jr. High Pastor's family....his father in law passed away and they are having a "small" (compared to what it could be) private funeral. They want "finger foods" so I'm doing 9 different items...100 pieces each of 7 of them and 50 pieces each of 2 of them...to equal 800 pieces (approx). They are expecting 100-120 people. That plus the cookies and brownies, and items that others are bringing should be plenty for what they are wanting. Ok, onto my question..... I am making mini-egg rolls using a vegetable filling. I had originally planned on baking them, but changed my mind earlier this week after making some for our family that were baked...I just didn't care for the appearance of them as much as I would if they are fried. Because I'm doing all of this myself I want to do as much ahead of time as I possibly can. SO, can I make the egg rolls up ahead of time and either refrigerate or freeze them and then drop into the hot oil just before the reception? I'm not sure if the wrappers (I'm using square wonton wrappers....they are th perfect size for what I'm wanting) will get soggy (the filling is pretty dry, and does have some cornstarch to absorb any liquid that does cook out) before I cook them and make them fall apart. Any and all help with this will be GREATLY appreciated!

Here's the rest of the menu:

mini vegetable egg rolls
potstickers (using KDs recipe)
chicken satay skewers with spicy peanut dipping sauce
3 different dipping sauces for the egg rolls & pot stickers

mini shredded beef & bean burritos (these will be baked to make them crispy)
taquitos (I'm going to use the premade frozen ones and cut them in half to conserve on time & $$)
shrimp quesadillas
salsa
avocado dipping sauce (thinner than a guac.)

cream cheese/salsa/black bean pinwheels (I can't wait to make these...I LOVE THEM)
turkey & cheddar & spinach pinwheels

mini quiches with ham & swiss & finely diced onion

and then I'm making a sheet pan (or maybe 2?) with brownies, and cut them into cubes...bite size pieces.

Iz, thanks so much for the help.....the food turned out beautiful! My friends loved it, and one of the ministry coordinators at church on Sunday (who has traveled all over the world) said that she had asked Mike (our Jr. High Pastor) who had catered the reception, when he told her that it was me, she said that she couldn't believe how professional the food tasted. I was excited Smiler

lori, i don't see why you should not be able to freeze those eggrolls. i have froze chinese dumplings before. the thing is--spray them with a little nonstick spray first so they do not stick together. then when you are ready to drop them in oil, they break apart easily.
you have quite a job ahead of you! good luck, and congrats on your fitness and weight loss! Way to go girl!

Lori!! Big Grin I was just thinking of you yesterday, you must have "felt" it Wink.

Sorry, I don't know the answer to your question but I did want to say Hi. I so miss our morning chats Frowner. Congrats on the weight loss.

I got Dena a Wii Fit for Christmas and we both still love it. Someone who is already really really fit may not agree but I think it is a great motivator. It has made me more aware of my balance and the way I move. Dena is very competitive and loves to beat me at the games. She is better at the ski jump than I am, I don't move fast enough but I am better at the balance tables (she is not patient enough). And she is better at the hula hoops and the boxing.

I just wish I knew how to log it on fitday so I can see how many calories I am burning from it.
