Hi all,

I am trying to finalize my plan for my Christmas menu today. I'm looking for something that would serve as a side dish for everyone else, but as a main dish for my vegetarian daughter. The main course for the rest of us is a pork tenderloin studded with garlic and rosemary. Here's the rest of the menu....oh! I get to host Christmas dinner this year, for the first time ever...I'm very excited about it Smiler

Appetizers and beverages: (still subject to change, depending on what
goes on sale today at the grocery stores Smiler)

wheat thins crackers with either artichoke dip or spinach dip
spiced nuts
relish tray
sodas
hot spiced cider (or an all fruit juice wassail)
eggnog
wine (to be served with dinner)
ice water and maybe some iced tea?

Dinner:
green salad
pork tenderloin studded with garlic and rosemary
garlic mashed potatoes and a nice herby gravy
broccoli casserole
and another side dish.....something for my veggie daughter that feels
like a main dish to her, but a side dish for everyone else
homemade rolls

Dessert:
????? haven't quite decided on this one yet.

What do you all think? Oh, and I'm serving 9.

You mean you don't want to serve Tofurkey?? LOL Wink

That is a beautiful dish and I think it'll go nicely with the beautiful meal you have planned. The only other thing I can think of but don't have a recipe in mind for is some sort of bean dish. White beans or something?? That goes with pork and would give her a little protein boost.

It sounds yummy. When I was a vegetarian, I would have been fine having the broccoli casserole as a main dish, with a salad and a roll, and maybe one other vegetable. Plus, it looks like she can eat all of the appetizers.

The recipe you posted looks wonderful though, and I'm sure she would be happy to have it.

So nice to see you posting Lori!

That foodnetwork recipe looks outstanding! Probably a bit heavy as a side dish for those who are having the rest of the meal (which looks amazing btw) but great and very special for your dd : )
