Sounds really yummy. I ended up grilling it. I put it skin side down on foil. Rubbed some olive oil on it and sprinkled it with Penzy's Fox Point spice mix and it was really good.

I'll keep your ideas for when it isn't grilling weather. (In a couple of days...)

I absolutely LOVE arctic char. I prefer it simply pan fried with a lemony-caper sauce with a little wine and just a bit of butter to make it glossy.

My hubby had it prepared this way on Saturday night, and it was better than what I ordered! Big Grin

I also loved it when I had it pan fried (just salt & pepper) and served over quinoa cooked in red wine and beef broth with mushrooms and shallots. Sounds horrendously snobby Razzer, but it's really easy to make. Big Grin


Life is like a roller coaster, with lots of ups and downs, but the curves, spirals, loops and corkscrews are what make life interesting.
