You can make a healthy version of Rachel Ray's "Mexican Lasagna"...it reheats REALLY well, and is pretty easy to put together.
Cook ground turkey/chicken/beef with some Mexican-y spices, add a can of tomatoes and rinsed/drained beans. Layer a pan with
tortillas (instead of lasagna noodles), the meat, and shredded cheese; cook ~20 minutes on 350.
Fine, and I've made
it "Greek," too, using pitas, Greek spices, garbanzo beans, and feta cheese.
What about meatballs? You could have
them on pasta (or make a Boboli pizza--they have whole wheat crusts now) or alone + sides earlier in the day, and then have
mini-meatball sandwiches later.
The standard crockpot chili is always a winner, with some tortilla chips and shredded cheese
as condiments on the side. i love a dollop of ff sour cream.

the ones i have gravitated toward are very ethnic--like the ones asking for chipotle peppers, or curry. but i bet some of
the more toned-down ones would be well-received by boys.
