Do you guys use these? They're an Asian noodle, the package I got from the local Asian store said they have buckwheat flour, water, and salt as the ingredients. They're a little thinner than semolina pasta, but seem thicker than rice noodles. They go really well with flavourful, lightish sauces.

The best part? No fat, low calorie (the whole package, according to the nutrition information, is 60 calories, and it's quite a bit of noodle!). I usually pair these with the peanut butter sauce that I make, which is pretty hi-cal but I love it--so the buckwheat noodles cut back the total calorie load.

Give 'em a try! They're inexpensive, too.

Calorie King writes books listing the fat, calories, carbohydrates, and other nutritional information on most foods and quite a few restaurants. He also has a website. His website is:

He's incredibly useful...I have the book because the website is not totally free to users.

most buckwheat/soba noodles I've found are made with wheat flour as well. Maybe she found one that is *only* buckwheat, which would explain the lower calories.

That being said, I have a recipe from Deborah Madison's Greens cookbook for soba noodles with lentils and chard/kale. Its an amazing combo!

My buckwheat noodles have the same calories as regular pasta - 200 calories for 2 oz.

I'm going to have to look around!

I checked out some info on soba noodles and compared it to the buckwheat noodles I have. The biggest difference that I am seeing is that the buckwheat noodles I have are very thin--much thinner than spaghetti, and thinner than the soba noodles that I am seeing. Maybe that's why they are lower in calories? The package I have doesn't say "soba".. just buckwheat. Not sure if there is a difference. ?? At any rate, I try not to overeat on any sort of noodle.. so I'm safe from that, at least. Smiler

Are soba noodles the same thing? I've heard of soba noodles, but I have no idea what they are. I just know what was on the package.

I don't know if your nutritional info is correct. Calorie King says 1 cup of cooked soba noodles is 113 calories. I'm sure there is more than 1 cup cooked per package. Sorry to be a spoil sport, didn't want to see you gaining for eating lots of these.

I've always been a noodle eater, but I absolutely LOVE buckwheat noodles. I use them in any asian flavored concoction I can come up with. I haven't found a bad recipe yet.
