So I made a BIG batch of lentils recently and have a lot left over.

Any ideas what I should do with them? I love the idea of a lentil salad or soup...but not sure what direction I should go with them.

KD has a really great recipe for Lentil and Lemon Soup, I think from the yellow book. It is one of my all-time favorite soups and it is super easy to make. I'm thinking another soup you could try would be to add some chopped ham and some broth for a ham-and-bean type soup.

I bet you could freeze them in batches and add to soups (or whatever) as desired.

I've made lentil crackers before. Can't find the recipe, but they were delicious. I think that Alton Brown did cookies with lentils.
