I love hearing what everyone is cooking for holiday meals.....so, what are you making for Christmas dinner? If you don't celebrate Christmas, what special holiday meals are you making (or have you made recently?)?

What about New Years?

Xmas Eve... it is just the three of us.

We usually have cheese and crackers and salad and dessert.

However, I am seriously craving pizza big time... and I'm seriously thinking of getting my cheese and cracker fix with pizza. Maybe I'll make 3 different individual pizzas with 4 different cheeses and toppings. Like a bleu cheese and apple pizza, and a brie and cranberry pizza, and a pesto pizza and a traditional pizza.

Christmas day... going to mil's. Don't know what we are having... but I'm nearly 100% certain it isn't pizza. Smiler

i have enjoyed reading about all the yummies you guys are preparing. my plan is to eat out (chinese) but now, i have this urge to cook cook cook!


Goals:
1. Stop thinking like a chronic dieter and start living to inspire.
2. HALT (hungry, anxious, lonely, tired) I will stop and tune in with myself should I experience these things, and respond with something healthy.
3. One word 2008: courage
4. Eat slow and mindfully.

I'm not sure. I know she has two, as we talked about it today. Her mom's and her Aunt Ann's. Aunt Ann's is a shortcut that uses ice cream in the dough. These are pretty authentic Polish recipes though. My Grandma was actually born in Poland.

Your meal sounds really wonderful and fun!

Well, we got told after Thanksgiving that our oldest ds was going to do 30 days as a vegetarian.
Okay, he's done all but the rest of the year, so, what do I serve? I've decided that apart from many things, dinner will be the same with minor adjustments. He is bringing recipes for two things he will eat, to share. We are having turkey, stuffing, green bean casserole (diabetic friendly and oh so good) vegetable tray, fruit tray, yams, ww rolls, wine and crustless pumpkin pie for dessert. Christmas Eve night we always do appetizers, so each person makes or brings two dishes, that's 8 for the family. Vegie son is doing tostadas, enchiladas (minis) dh is doing meatballs with sauce and chocolate fondue,
I am doing fruit and vegies with friendly sauces and youngest ds is doing chicken and egg salad petit sandwiches...we are all doing the beer cheese soup. A lot to eat, but very small portions of everything.


Summer Challenge Goals:

1. Get out of the house and in the pool four days a week.
2. Schedule meals a week at a time.
3. five fruits and vegetables a day, along with water.

Everything sounds so terrific that everyone is making. I am doing 2 dinners..one Saturday and one on Christmas day but both small.

At both I am having:
steamed green beans that I cool and sautee at the last min. w/ almonds
roasted potatoes with onions
Green salad
coconut icecream and gluten free brownies.

For Sat...i'm making coconut chicken in the crockpot and on Christmas beef tenderloin.

(ps...the coconut ckn is so easy and yummy..i have a link on my blog..I actualy got it via you Lori..via various blog links. Same w/ the coconut ice cream. you need an ice cream maker but it is wonderful for folks that can't have milk!)

How fun, D! I love to see ethnic/family traditions in holiday meals. Normally we do Christmas Eve here at our house, and it used to be that we'd alternate between my family's traditional Christmas Eve dinner and dh's traditional Christmas Eve dinner (he's 1/4 Italian, so it has it's roots there), but the past few years we've gone Italian with Christmas Eve Smiler This year we are going to my mil's house, and I'm sure it will be turkey....she doesn't do the old traditions anymore. We're going on Christmas Day to have dinner with friends--they're Cuban. We're taking a turkey, sweet potatoes, and cornbread dressing. They're providing roasted pork, yucca, plantains, and black beans and rice.

Not cooking a thing this year.
We are going to my sister's on Saturday and we are picking up the Honey Baked Ham on the way there.

I may throw together a Watergate Salad but that doesn't require "cooking" Wink


1. do 4 laps on walking track without "resting"
2. do 1 mile (17laps) in 20 minutes (3miles per hour)

Italian Christmas Eve, always fish! Generally seven, there are all kinds of stories and legends as to why. Nobody is really sure, we just do it!

Some of the fish is fried, baked, in fish salad, in clam sauce on linguine. Generally a nice antipasto first that includes, mozzarella, fresh provolone and ricotta salada (kind of like Italian feta), roasted peppers, artichoke hearts, olives, cured meats like salami.

Christmas day is lasagna, sausage, salad and (my mom always had a ham) probably a small turkey.

I am making my traditional Italian flag Christmas cookies. That is a whole day for me since now all of my neighbors request them, so there is lots to bake!

I think I'm going to make pot roast this year, because it will just be us and our parents. I may also make a boneless leg of lamb with garlic and rosemary, but I'm not sure on that yet.

We'll have the roasted vegetables with the roast and maybe rolls.

We are having a big Open House on Dec. 29th though. For that so far I'm planning:

Ham with mini buns for small sandwiches

vegetable tray with fresh and marinated veggies and olives.

assorted appetizer type things (pastry with feta cheese and carmelized onions, mini phylo cups with brie and fig preserves and maybe the same with cranberry (D's idea), meatballs that my mom is making, and she mentioned something else.)

My mom is also making pumpkin pie and kolaches, which are Polish pastries.

I'm doing x-mas eve this year (going to my parents for x-mas day).

This is my menu:

wild mushroom soup

pine nut and asagio ravioli with roasted red pepper and goat cheese sauce

poached salmon with green beans

salad and cheese course

almond and pear tart from our organic bakery

Not sure what I'm doing for nibblies but probably something small like olives and nuts since we have so many courses going.
