I just pulled out my KD cook books today. Don't ask me why? I have no idea. But I started reading them again....what inspiration, motivation and uplifting reading. I use the recipe sections a lot...enough to have spills and spots on the pages, but for get to read the opening pages. I think that should be my required reading at the beginning of each month!

I made the chicken breasts stuffed with pesto tonight... They came out great!! And look very pretty!

Cathy, this would be a good recipe if you want to try tofu. I made some with tofu (and followed the recipe...) and I made some and used white beans instead of tofu. (I was cooking for dinner co-op so I made 4 batches of the pesto Smiler) I thought the white bean one was as good as the original recipe.

I might stick to the white bean pesto as dh needs fiber more than he needs soy protein. Smiler

I use Penzeys Ground (red) Chipotle Pepper for smokey-heat. Among other things, it works very well with corn, and with black beans.

Penzeys doesn't stock it, but Spanish Smoked Paprika is available in both sweet and hot varieties.

I'll put it in the recipe file. You can't taste the tofu at all. The filing part was ok...

it was the crust that needed help. Smiler

GS: I am NOT a tofu fan...but the pie sounds interesting can you post it...or where would I find it?

Tonight, I made the city-fish (city chicken but sub fish for chicken). Used cod. Yum Yum!!

Also made baked chili fries tonight. I'm going to have to break down and order the smoked chili from Penzey's or someplace.

Jack's (a local brew pub) is our family's fish and chips gold standard. (They use a deep fat fryer...) ds gave Jacks a 9 and the dinner tonight a 6 (very high marks from ds!). dh gave tonight's dinner an 8 - not bad compared to the gold standard!

Had left over pumpkin pie (made with tofu and a walnut crust) (not in KD's books - more of my own devising) - which was much better tonight than it was last night. I've got 3 slices in the freezer... will have to see how it defrosts.

Going to make an apple pie next week and try an oil crust from Vegetarian Times. In search of the ultimate crust - with no butter or shortning!

OK, now I'm going to read the front of the book again. I've read it before... but it can't help to read it again before the holidays for some additional motivation!
